Ingredients:

  •  1 1/2 – 2 lbs   Any type, or mix of Mushrooms, sliced
  •  1 – 2 Onions, diced
  •  5 – 6 Garlic cloves, diced
  •  Spices: Thyme, oregano, rosemary, add what you like and have available
  •  1 – 2 tablespoon Amino liquids or soy sauce 
  •  1 – 2 tablespoons Miso paste
  •  Can of coconut milk or other plant based milk
  •  1 – 2 cups Turmeric tea, or veggie broth, or water
  • A bit of sherry or white wine for extra flavor

Instructions: 

1. Sauté onions, garlic, spices for a few minutes. Add mushrooms, soy, sherry & cook covered for 10 minutes.

2. Stir. Cook uncovered for another 10 minutes, stirring if necessary.

3. Add coconut milk, extra liquid and let cook another 10 minutes

4. Turn off the stove. Dilute the miso paste in a bit of water and stir it into the soup for extra umami flavor and extra nutrition. Can be added at any time but might loose some of the benefits.

For anyone who does not like the texture of mushrooms: Blend the soup to make it entirely creamy.
